Building your own blogging platform from scratch is probably the best way to show off your skill-set. I think the best way is to build application that solve specific problems that similar applications have. It shows that you have a client mind state when building them

How about building a plateform like codewars where users solve coding problems in a built-in editor and test there code there, it's challenging but it definetly proves your skills
