How do you choose a tech stack for a new side-project?

I'm torn between a few and trying to balance the speed of development with the desire to learn something new. Another issue is how can I tell if the framework I want to use is powerful enough to support what I'm trying to do. Some of the frameworks I'm interested in are on the newer side and might not be ready for prime time.
